  • 2 tbl. Spoon olive oil
  • 1 chopped red onion
  • 2 cloves garlic crashed
  • 500 grms. fresh chopped tomato
  • 1 cup brown bourghoul
  • 1 ½ cup of water
  • 1 tbl. Spoon salt
  • 1 dash white pepper
  • 1 dash chili powder
  • 100 grms. boiled chickpea
  • 1 ½ tbl. Spoon tomato paste
  • 20 pcs. mid-sized shrimps
  • 10 grms. fresh thyme leaves

 Arabiata Sauce Ingredients

  • 1 tbl. Spoon corn oil
  • 2 chopped red onion
  • 1 chopped carrot
  • 1 pc. Celery chopped
  • 1 pc. Leeks chopped
  • 1 ½ kg fresh tomato
  • 2 tbl. Spoon tomato paste
  • 15 grms. fresh basil
  • 2 tbl. Spoon salt
  • 3 cloves garlic
  • ½ tbl. Spoon black pepper
  • ½ tbl. Spoon white pepper
  • 2 cups of water


Method of Cooking Bourghoul Banadoura

  • Fry onion and garlic into 2 tbl. Spoon of olive oil until golden, add bourghoul and stir well. Add the fresh tomato, tomato pastes, salt, white pepper, chili powder and water. And in the end add the boiled chick pea and cover it over very low heat for 15 minutes add a little water if too dry.

Method of Cooking Arabiata Sauce

  • Heat corn oil in a large skilled over medium heat. Sauté onion and garlic in oil for 5 minutes then add the carrots, celery, leeks, then add the fresh tomato and the tomato paste, basil and add the spices (salt, black pepper, white pepper) Add the water bring to a boil. Reduce heat to medium and simmer uncovered it about 25 to 30 minutes. And the ends blend all together.


  • Put the bourghoul into the plate, sautéed the shrimp with arabiata sauce and place into the top of the bourghoul. Garnish with the fresh thyme.
