Costolette di Agnello Recipe (Lamb Chops)

With Eid Al Adha just around the corner, the lamb-mania already broke out. Not only do people plan their hangouts, go on endless shopping sprees, but they also long for the drooling dishes and mesmerizing barbecue nights. That is why we have brought you a classy lamb chops dish with an Italian twist that will elegantly suffice your appetite.

Step 1: Grilled Meat


  • 250 gms Lamb Chops with Bones
  • 15 ml Extra Virgin Olive Oil
  • 1 gm Rosemary
  • 2 gms Rock Salt
  • 2 gms Crushed Black Pepper

Method of Preparation

  • Marinate lamb chops with extra virgin olive oil & Rosemary and season with salt & pepper
  • Grill the marinated meat on a preheated grill as per your need i.e. Rare (50 C), Medium (60C) or well done (72C)

Step 2: Roasted Potatoes


  • 160 gms Potato Laratte
  • 15 gms Butter
  • 15 ml Olive Oil
  • Salt & Pepper for Seasoning
  • 4 gms Finely Chopped Garlic

Method of Preparation

  • Boil Potato laratte with the skin on in salt water (Do NOT overcook).
  • Marinate the boiled potatoes with butter, rosemary, extra virgin olive oil, chopped garlic, salt & pepper.
  • Place the marinated potatoes in a tray & roast it (200C) for 18 minutes.

Step 3: Balsamic shallots


  • 20 gms Peeled Shallots
  • 12 gms Balsamic Vinegar
  • 40 gms Butter
  • 100 ml Chicken Stock
  • Salt & Pepper for Seasoning

Method of Preparation

  • In a hot pan, take peeled shallots, add balsamic vinegar and stir until reduced
  • Add chicken stock and butter at this stage
  • Cook the shallots and reduce until all liquid almost dries up.
  • Season with salt and crushed black pepper

Step 4:  Plating

  • Place the roasted potatoes in the middle of the serving plate
  • Place the three pieces of the lamb chops around the potatoes
  • Pour the shallot balsamic sauce on the lamb chops
  • Drizzle with extra virgin olive oil & crushed black pepper
  • Garnish with rock salt and some herbs
