Saffron Risotto Recipe! Risotto is a simple and widely-celebrated dish. Despite being made up of very basic ingredients, it is considered a fancy Italian treat that can be a side dish or even a make whole meal. It all depends on whatever additives you may choose; you can go for a basic creamy risotto with extra Parmesan cheese or a luxurious dish with Truffles or any pricey ingredients. Just remember that your pantry always has the upper hand!

Last week, we shared another Italian delicacy, Osso Buco, and today, we are sharing a simple Saffron Risotto recipe that can go perfectly with your juicy Osso Buco. You can even try this Risotto with other main dishes. It is totally up to you!

Ingredients

  • Medium onion, very finely chopped – 30gms
  • 40g Unsalted Butter
  • 10ml Olive Oil
  • 50g Carnaroli Rice
  • Saffron Stock Broth (More as needed)
  • 40g Grated Parmesan (Preferably Parmigiano-Reggiano)
  • Salt & Freshly Ground Black Pepper to Taste

Method of Preparation

  • In a saucepan, cook the onion in olive oil over medium for about 5 minutes.
  • Add the rice and stir well.
  • Cook it over medium heat for about 3 minutes
  • Add some saffron stock broth, turn the heat to high until the broth comes to a simmer, and then adjust the heat to maintain a steady simmer
  • Cook until most of the liquid has been absorbed. Stir every minute or two (there’s no need to stir constantly).
  • Add another cup of broth and keep cooking, stirring and adding broth until the rice is al dente but not raw or grainy in the middle
  • When the rice is ready, turn off the heat and add the remaining butter and parmesan cheese. Season with salt and pepper.

Plating

Once the saffron risotto is ready, place it on the middle of round pasta plate. You can place the cooked Osso Buco on the top of the saffron risotto add some sauce on that, garnish with one fresh rosemary sprig.
